New Year's Day Dinner Menu

This will be the first New Year's Day Dinner of its kind. Over the past 20 years, we came to celebrate family and friends at my New Year's Day Dinner, but 2020 has been a test of our faith, love and friendships. I've decided to not let "THE VID" take over our annual ritual, but it will be a little different.

Salmon fillets laid on a bed of fresh vegetables, covered in a parchment paper pouch (en papillote) and baked in the oven. The fish is also capped with basil compound butter for extra flavor!

Raspberry Trifle

You will be asking for this specialty dessert at every holiday, never mind that it’s usually served during the Christmas season. The soft ladyfingers and pound cake are sprinkled with Sherry to keep up the Holiday spirit. Raspberries add a unique taste to the rich Bavarian custard. Topped with creamy whipped cream, roasted almonds and maraschino cherries.

Cornbread Dressing

Cornbread dressing is a staple on Thanksgiving (and Christmas) tables every year. This cornbread dressing has so much flavor because it’s seasoned with sage, thyme, rosemary, celery and green peppers, plus the texture is always perfectly moist. Whether you call it dressing or stuffing, this dish is essentially required at Thanksgiving. Even though buying boxed or premade cornbread can make dressing recipes a lot easier, we use homemade cornbread, and your family will taste the difference.

Made with 5 different cheeses. The cubes of Velveeta give you nice cheesey pockets in this casserole. Sometimes we add 2 additional cheeses like mozzarella or provolone to make this the best Mac & Cheese you've ever eaten.
